Sometimes we'd bale it to make hay (not the same as alfalfa though). Mostly we just plowed it under. The reason they burn wheat stubble is purportedly to reduce weed competition and disease. Studies (at least some) have shown otherwise. Perennial bluegrass is another matter, though we never grew bluegrass. With grass, burning has the effect of dramatically increasing growth the following season.
