I'll have to cook them first, but frankly I like them raw. If you don't grow them, you can't comprehend the delight of a raw beet right out of the ground. They are wonderful, and softer than a carrot. Yum.

Fortunately, I can still get them at local farmer's markets. I've never thought to pickle eggs with anything but but canned beets, though. With the fresh, I like to roast them in the oven then peel them and harvard them. :9

...and on Wednesdays it's the $3.99 "Sandwich of the Day." This sandwich is the closest thing I can find to the "Italian Subs" I remembered in my Massachusetts youth. The pepperoncini probably add more to the overall flavor than any other ingredient.

... kosher dill pickles (the very sour kind with garlic) are pickled in brine, not vinegar. The ones made with vinegar are not nearly as good.
