Photo & Recipe: Paula Deen's BLT with avocado & cream cheese
Fried Egg and Avocado Sandwich

* 4 slices bacon
* 2 tablespoons butter, room temperature
* 4 slices wheat bread, toasted
* 4 ounces cream cheese, room temperature
* 1 teaspoon minced fresh parsley leaves
* 1 teaspoon minced green onion
* 1/8 teaspoon salt
* 1/8 teaspoon ground black pepper
* 2 large eggs
* 4 slices tomato
* 1/2 avocado, peeled, pitted, and sliced

Directions

In a small skillet, cook bacon over medium-high heat until crispy. Remove from pan, and drain on paper towels. Drain grease from pan, reserving 1 tablespoon.

Spread butter over each side of bread. Place 4 slices of bread, butter side down, on skillet over medium heat. Flip bread and toast the other side. Remove to serving plates.

In a small bowl, add cream cheese, parsley and green onions together. Add salt and pepper. Spread onto 1 side of each toast slice.

In same small skillet, fry the eggs in reserved bacon grease over medium-low heat. Crack the yolks and flip. Place each egg on top of 2 pieces of toast. Cover each egg with 2 slices of bacon, 2 slices of tomato, and 2 slices of avocado. Top with another piece of toast and serve immediately.

My butt grows two pant-sizes whenever I watch her cook. Her Lemon Blossoms are the bomb. (I make them as a cake sometimes to save time.)



Lemon Blossoms

Ingredients:
18 1/2 ounce package yellow cake mix
3 1/2 ounce package instant lemon pudding mix
4 large eggs
3/4 cup vegetable oil

Directions:
Glaze: 4 cups confectioners' sugar
1/3 cup fresh lemon juice
grated zest of 1 lemon
3 tablespoons vegetable oil
3 tablespoons water

Preheat the oven to 350 degrees.

Spray miniature muffin tins with vegetable oil cooking spray. Combine the cake mix, pudding mix, eggs and oil and blend well with an electric mixer until smooth, about 2 minutes. Pour a small amount of batter, filling each muffin tin half way. Bake for 12 minutes. Turn out onto a tea towel.

To make the glaze, sift the sugar into a mixing bowl. Add the lemon juice, zest, oil, and 3 tablespoons water. Mix with a spoon until smooth.

With fingers, dip the cupcakes into the glaze while they're still warm, covering as much of the cake as possible, or spoon the glaze over the warm cupcakes, turning them to completely coat. Place on wire racks with waxed paper underneath to catch any drips. Let the glaze set thoroughly, about one hour, before storing in containers with tight-fitting lids.

Yield: 5 dozen
Prep time: 10-12 minutes
Inactive prep time: 1 hour
Cook time: 12 minutes
Ease of preparation: easy

20. I would modify it thusly:
The bacon would be turkey bacon, and I would microwave it and dab the grease off it. 70% less fat,and I loooooove turkey bacon.
I would regular-toast the bread w/out butter; or maybe just a veeeeery small amount melted and spread on it in the toaster oven.
I'd use lowfat or fat-free cream cheese.
I don't really like eggs on a sandwich, so I would leave them off. Maybe.

I'd also use whole-grain wheat or locally-made grain bread, of course.

I think it would still be pretty yummy.

27. Watched he make a breakfast pizza this weekend
A pancake with cream cheese and tomato sauce topped with scrabbled eggs, bacon and cheese placed in the oven to melt the cheese then served with maple syrup and butter.
If I hadn't been riding on my trainer while watching I would have gained weight by osmosis through the TV.
