What kind of apple would you use.
I'm leaning toward a combo of Granny Smith and Fuji to get a tart and sweet mix.

Just don't go with so much tart that you have to dump a bunch of sugar in there. ;-) Try 1/3 tart to 2/3 sweet. Good luck--baking with apples in the fall is a real delight!
