Whats your thanksgiving menu?

I haven't really decided mine yet but tentatively:

Appetizers (haven't really decided on them)

Roast Chicken W. Rosemary(we don't like turkey)

Cranberry Chutney (I might make this weekend from scratch)

Potato Au Gratin (julia child's recipe)

Shrimp Something...not sure yet

Possibly a small rack of lamb (Trader Joe's stocks a fairly inexpensive rack of lamb)

Cornbread, Cranberry , Walnut Stuffing

Baby Spinach w. goat cheese, walnut & pear Salad

Green Beans

Pumpkin Pie (hopefully but depends on time)

Warm Chocolate Cakes (Vong's Recipe)

6. Whoa, I just found it, I'm going over to haole girl's house! Oh, that's
Texas, that's too far to go.
I'm looking for precooked, but they all say 2 hours cooking time after you get them. What do I need that for, and it's more complicated than that.
So I'm looking at restaurants, but then I have to make a reservation, etc.
Maybe Clifton's Cafeteria. If they are open, but that's 20 miles, no parking, and the line may be 2 blocks long.
Los Angeles/South Bay area.

2. Our menu:
Turkey

Cranberry sauce

Fruit cocktail

Steamed veggies (probably asparagus, if I can find it on sale)

Crescent rolls

Cornbread stuffing

Gravy

Hawaiian rice (it's really just a cheese, broccoli, rice casserole)

Lime jello dish w/trimmings (a family member will bring it)

Carrot cake, chocolate pecan pie, and pumpkin pie

Beer, wine, and a lot of Rum for those of us who need it. ;-)


I'm still debating whether or not to have a potato dish since there will be so many carbs on the table! If I do, it will be Sweet Potato Soufflé.

11. not sure how this will turn out but will use emeril recipe & add my twist
2 cups cranberries
Juice and chopped zest of 1 orange
1/4 cup Port
1/2 cup sugar, or more if needed
1 teaspoon cinnamon
1 tablespoon cornstarch

In a small saucepan combine cranberries, orange juice and zest, port, sugar and cinnamon. Bring to a boil, reduce heat to simmering and cook until cranberries are tender, stirring occasionally. In a small cup make a slurry with cornstarch and 1 tablespoon water. Whisk cornstarch mixture into cranberry sauce and cook, whisking, until sauce thickens. Taste and add more sugar, if necessary.

My twist is to add some ginger along with the organge zest

and to put some dry roasted ground cumin when the sauce has cooled off

41. My husband's family is Italian, and they do homemade tortellini
(actually they pronounce it tootalini) for any holiday! And it is some kinda good. I will get to enjoy that on next Saturday when we do his family's Thanksgiving!!! I have my side of the family's on actual Thanksgiving, and then we do his side's. OMG too much yummy food!

12. If I can find good ones, stuffed sugar pumpkins. Otherwise butternut or acorn squash.
I do two kinds of stuffing. Baked (comes out like meatloaf) with shallots and whatever fun mushrooms I can find. I'm hoping to score some black funnel, but I'll go with shitake and anything else that seems good. The other kind I like to put dried fruit in and that's what I'll stuff the squash/pumpkin with.

We harvested a great crop of blue potatoes. They're the best for mashed potatoes as they start out sort of a light purple and turn cobalt blue as they cool. Mushroom gravy, vegetarian of course, on top.

Other than that, I'll have to yield to whatever the farmers' market has available on Tuesday. The girls are going to bake the pies and breads and I'll score some fun cheeses and lots of fruit.

I love Thanksgiving!

baked delicata squash seasoned with sage
pear and chanterelle bread stuffing (really a dressing since it will be cooked on the side)

23. I'm hosting my first-ever Thanksgiving dinner for my boyfriend's parents
I don't celebrate Thanksgiving (I'm Italian - not many Italian pilgrims were around :), and normally I'd either not do anything or go to my boyfriend's parents' house. This year his mom is not feeling like cooking, though she'll bring her wonderful oyster stuffing and potato salad.

Since I love to cook and I'm quite good at it, I can't wait to offer a feast for the senses, Italian-style.

Here's the menu:

Turkey all'Italiana - regular turkey with a few twists, including pancetta slices covering the breast and tied by a string

Oyster Stuffing - they are bringing that, made of real oysters (we are in the beachy SE of NC)

Potato Salad - they are bringing that

Green Beans and Sliced Almonds

Sauteed Potato Discs with Olive Oil and Rosemary

Yeast Rolls - made from scratch

Cranberry Sauce - canned. I hate it but they love it

Turkey Gravy - from drippings.

... and the piece de resistance...

Buche de Noel (yule log), with meringue mushrooms, all done by moi, including the genoise and ganache.

43. Does your grill have a cover?
because you can cook the bird with indirect heat; or use a foil tent.

Do a bunch of coals as usual, then pull them to the extremities and put the bird on the grill where the coals are not.

Cook to temp of 165 degrees. Break down and get a thermometer for gods sake. Or until juices run clear and leg easily pulls away from bird.

NOTE: A 12-lb turkey can easily handle 60 to 90 minutes of resting. Once you pull it off the grill. During that time, temperature can rise 30 degrees if not exposed to drafts.

you think? Seems like just legs and thighs take forever. Grill does have a lid but we use wood. I suppose I could buy some charcoal but it's been so long since I have used it not sure I remember how!

I do have (two) thermometers.

remember the key is , indirect heat, so make sure the coals aren't under the bird, but on both sides of it. With a cover, it will work great,keep the fire low and steady, I expect it will take about 4 hrs but use the thermometer. You can put a sheet of foil on the grill to prevent scorching. Use a spray bottle of water to make smoke. MMM MMMMM Tasty

Everything fresh and from scratch, even the turkey is coming straight from the farm.

So I guess your folks are coming after all? It still amazes me how you can cook so well and so much in your tiny kitchen. :hi:

Cranberry jelly stuff outa da can
Butter (no substitute)
Apple Walnut salad (no mayo, some kind of sweet sauce but with some vinegar deal wife's family recipe)
Punkin pie (son's favorite, even though he'll be in Raleigh, 1st TG in 26 years w/o him 'sniff')
Pecan pie and before any says anything, my wife's pecan pie is a prize winner, absolutely the best ever, no one in family will eat any one elses because they know they'll be disappointed.

Whatever wine I open up

I'm getting full just writing all this. Seriously, this menu has been unchanged since at least 1988.

Thanksgiving is an epic occurrence at the old homestead. My mother, aunt, and a cousin are "lead cooks", and I and my cousin's son-in-law pitch in with some stuff as well.

Turkey, a few different types of stuffing, cranberry sauce (real and the canned stuff), squash, sweet potatoes, mashed turnip, creamed onions, corn, green beans, two types of apple pie, pecan pie (my wife is a southern girl), mince pie (my father loves that crap), coconut custard pie, beer (Bud, Sam, and Guiness generally), wine, and some Jaimeson's to get things off to a good start.

42. Going to the boss's house so not sure about the entire menu -
I'm taking my own personal Tofurkey and Tofurkey giblet gravy. My mom's making an old family recipe pumpkin pie. I'm making mashed (whipped) sweet potatoes, and thinking about a fruit salad and/or gorgonzola stuffed strawberries with my super primo balsamic vinegar that only gets brought out for super, super special occasions.

I only make turkey once a year! :)

51. We'll start off with Sweet Potatoes with Apples and Walnuts
Then a nice seitan and tofu "bird" (I know, I know: GLUTEN! Hey, it's thanks giving!) with vegetarian stuffing and a vegan red wine and tamari gravy.
For sides we will prepare a vegan green bean casserole as well as cranberry salsa. Of course everyone will get one or two maple wheat rolls. For desert we enjoy a tofu pumpkin pie.

The kids at the "little" table will each get his her own 10 piece box of chicken McNuggets, sauce, biggie fries and a biggie soda.

My parents handle the core items.

Turkey
greek stuffing (w/chestnuts)
gravy
cranberry sauce
cheese and spinach pies
stuffing
special stuffed potatos greek style
something with sweet potatos. usually super sweet with marshmallows.
and lots of other stuff

I plan on making a Pumpkin Cheese Cake which is AMAZING! Let me know and I can give you the recipe. My sister is making an apple pie. I am also going to help make a special soup for the baby. I found a recipe for Butternut Squash soup in one of Thomas Keller's books that I want to try. Whole Foods is going to have a cranberry-orange relish which looks killer. My wife will probably also get in on the action.

2 fried turkeys, spiral ham and a rib roast

mashed garlic potato's, sweet potato's and mac and cheese casserole

broccoli& cauliflower salad , honey glazed baby carrots, string beans with sauteed onions and mushrooms

Rice and oyster stuffing & cornbread stuffing

Dessert , granddaughters baking pies, chocolate cream, and a minty lime with chocolate crust and a sparkling grapefruit pie.

a white sangria and our own wonderful homemade wines

very one helps with cooking and preparation, after dinner we will have a musical performance by three of our grandchildren, Erica on viola and Shain & Dylan play acoustical guitar. All wonderful musicians. WE am so looking forward to it!

77. That's a big food day in my house.
Pumpkin bread and buttermilk coffee are available for snacking while we make breakfast of stuffed croissants,(sausage, eggs, cheese, top with cold tomatoes).

Salmon spread, crackers, cheese and salami will be out by half time.

Dinner is as follows:

Turkey, mashed potatoes, apple cinnamon dressing, bacon wrapped asparagus, whipped cream fruit salad, lime cream cheese pineapple jello rings, and apple pie with ice cream for dessert. There is a second choice of chocolate mouse creme pie.

Makes me tired just sizing' it up.

The turkey, not the pan or the grill, was free
Makes you wonder if they overestimated their turkey inventory this year

Dressing (box)

Gravy (bottle)

Brussels sprouts
Frozen but sauted (sp) with garlic and green onion

Sweet potato baked thingy (canned potatoes with nuts and Bourbon)
Even with buying a small bottle of Bourbon it all seems to wind up in the dish
Nothing like a sweet potato hangover

Homemade biscuits (hey, I can do that)

Pie as yet to be determined

I'm in Austin so it would be an awfully long drive.
I'm going to go volunteer to feed the homeless. My situation sucks but I still have a roof over my head so I'm going to go help somebody else that has it even worse.
I originally meant to be snarky about it because I get a little sensitive about being poor and far away from my family this time of year. But I know that your OP was written with good intent, so I have no snark for you. Seeing your posts over the years, I have never seen any malice come from you and I would be wrong to imply anything now. I have seen a lot of insensitivity to the poor on another post from others and I hope they see what it does to their fellows, although I doubt that it will.

chestnut/apple/french bread stuffing and today at my son's school they had: turkey breasts, cranberries, stuffing, mashed
potatoes (boxed but not bad), sweet potato casserole, corn pudding, grapes, pumpkin
Cranberry/orange sauce
pie, green beans and corn bread mini muffins. And then the kindergarden sang.
French bread made by the husband

I usually make, and love, all the traditional foods, but this year my husband and kids have a ten day vacation, so we are going to Greece on Thanksgiving day. My non-American friends have learned to love the Thanksgiving food I make, so the weekend after I get back I'm making turkey, sweet potatoes, green bean casserole, mashed potatoes, cornbread dressing, cranberry sauce and gravy. My husband will make the pumpkin pies.

Mrs. Smith's pumpkin pie (I paid $1.50 for it - it was on sale and I also had a coupon)

We like things fairly plain and not too high in calories.
