Holy crap you could at least find five more!

Can't STAND Tabasco -- I think it just overpowers all other flavors
and you end up eating a bowl of Tabasco-flavored... stuff. Except in
Bloody Marys and Bangers (shot of tequila/mescal, good splash of
grapefruit soda - Fresca - and Tabasco to taste -- cover with napkin,
slam it on the bar, and drink it while it's foaming).
.
I visited Tucson for almost 20 years before moving here (1-2x/yr),
and ALWAYS had a huge percentage of my luggage space taken up by
bottles of hot sauce for friends back East.
.
AJ's here in Tucson (an upscale gourmet SUPERMARKET) is probably the
best local source that I've found.

10. My ex-father-in-law in SE Texas made his own hot sauce
but refused to share the recipe with anyone. That stuff was G-O-O-D. It was clear, so I guess he used white vinegar to soak the hot peppers in. A bit of salt, maybe? I have no idea what else went in there, but I've never had a better hot sauce.

5. I'm not a big connoisseur of hot sauces
but I really like El Yucateco's Chipotle hot sauce.

Their habanero hot sauces are too hot for my taste, but the chipotle (which is hard to find) is about right and has a good flavor to it.

17. El Pato - the jalapeno version in the green can.
We use a couple cans a day. But I use all kinds, depending on the dish. Just tried Siracha in the past year and it is fantastic - on our second big bottle now. Gotta have Tabasco for hot wings (I usually get Franks) and Cholula is SO good on pork, although there are others too.




Herdez is good too, but a little more expensive

29. the el pato is 50 cents or less, usually
it is just a basic salsa - fast and easy good with tortilla chips for a fairly low fat snack

the red and yellow can versions come in quart size cans but I have never seen the green jalapeno in the nice big size

the herdez also comes in glass jars and it is pretty tasty, but I only get it when it is on a real good sale, because we go through it too fast for the regular price

we also use it as a "base" for fresh salsa - a can plus chopped onion, various chiles, tomatoes, cilantro

Try them both side by side. Valentina (red label, not black label) is massively better.

I like different hot sauces for different purposes and tastes-- vinegar based or not?, fiery or mild?, fruity or astringent?

But for day-to-day sprinkling on just about everything from eggs to seafood, you can't beat good ol' Tabasco, IMO. Of course, I like vinegar a lot. My personal favorite hot sauce is:

A bunch of minced Thai bird's eye chilis
3 parts distilled white vinegar
1 part nuoc mam fish sauce

Combine, stir, let sit for an hour before serving.
