just like pasta, it picks up whatever sauce flavors you have really well.
And it's best to cook it a little underdone so that the strands stay separated.

And after you scrape the insides out (with a fork), let the stuff drain in a seive for a couple of minutes. Otherwise you'll get a little puddle of water in your bowl.

We've been eating it lately, and we like it a lot!
It doesn't taste anything like pasta!
It has a nice, fresh veggie taste. I cut it in half the long way, and dig out the seeds. Then I put it face (cut side) down on a microwavable platter, and cover with waxed paper.
I nuke it for about 10 minutes on the first side, and then turn it over for about 5 more. This is for a big one.
I like butter on mine, and my husband eats his plain. It's easy and yummy!

A full pint of Johnny Walker Black and it don't matter on taste. OR, if you smoke a bit all day, and not Marlboro, it won't matter. Munch away.

it will taste like squash so I don't get sad. I like the idea that it picks up the flavor of the sauce. I am trying to eat healthier but veggies are yucky to me.
I am too old to still hate my veggies - sigh.

But it holds the sauce and may be your best bet. My guy loves pasta, but enjoys spaghetti squash. Also, butternut squash soup might be one to try, if you guys like soup.

I love all kinds of squash. It doesn't have a ton of flavor but I like it simply with butter and salt and pepper. I figure if I want to eat spaghetti with sauce, why not eat spaghetti?

Spinach with 3-Cheese Casserola . Cooking oil 6 beaten eggs 8 oz cream cheese, softened cubed 1 lb cottage cheese 8 oz Swiss cheese 10 oz frozen chopped spinach, thawed and water pressed out . . . 1. Oil an 8x8" baking dish (this looks so beautiful when cooked that I use a glass one). . 2. Mix all ingredients (will look dis-GUST-ing until cooked) . 3. Pour into oiled dish and bake at 375 for about 45 minutes. . . . . . I know... I know... many (most?) detest spinach -- but not THIS spinach. . . I used to take this to potlucks with the impossible dream of having enough left over to enjoy the next day. . . NEVER happened. . . .

I wish it kept better. Not one of the longer storing squashes, generally 2 - 3, maybe 4 months. Once in a great while I'll get one to go six months. Generally, I have to process most of them when they start getting little spots and either use up or freeze. They do freeze well once cooked.

i don't think it's bad, i just don't think it's a fair replacement for thin (not angelhair) pasta
you can use the same sauces you would use on pasta, and it's good, but it's a different kind of good
