Great Concerts You Wish were available on DVD
Maybe mine are and I just don't know:

Springsteen's BORN IN THE USA tour, circa 1985-6\

Madonna's Blonde Ambition tour (I think it was called, the one that formed the basis for TRUTH OR DARE)

The very first leg of U2's ACHTUNG BABY tour, the indoors version.

22. Curiously, I saw Musical Box recreate BOTH of those tours live (full costumes and everything).
Musical Box is the ONLY tribute band with full support from all current and former members of Genesis. They even loaned them all 1200 B&W slides for the 3-screen slideshow behind the stage in the Lamb tour. They've helped them with costumes, vintage instrumentation and techniques, and choreography. Very theatrical.

After the Lamb part of the concert was over, the lead singer asked the audience what they should perform as an encore. Someone beat everyone to it - "SUPPER'S READY!" The entire place exploded in laughter - very much a "FREEBIRD!" moment. I was pleasantly surprised at the Selling England concert when they actually DID do "Supper's Ready" as an encore! Flower and all.

2. Way too many to even begin listing.
Mostly small acts at clubs. I've seen so many amazing shows though that I wouldn't even know where to start if I could choose to see one again.

4. Zappa + Beefheart, the "Bongo Fury" tour
I've heard a couple of bootlegs from that tour that were just weak...but the show I saw at the Berkeley Community Theater was astounding. Zappa and Beefheart didn't share the stage at any point...a real disappointment...but the sets themselves were great. Zappa was REALLY into the guitar pyrotechnics that night...he did a killer version of "Black Napkins" and more.

5. Dar Williams playing a concert in a church in Toronto in 2005.
I went to that concert with my dad. It was general admission so I ended up in the second row. It was one of the best concerts I've ever seen. :)

6. In 1969 I saw the Stones in Madison Square Garden. Opened with Ike and Tina Turner.

I tell peeps about the Vault all the time and they look at me like I'm NUTS.

Seek out the original Pretenders live at the Palladium in NYC.
James Honeymann Scott tosses out some paint peeling guitar solos.
It's a classic.

8. Talking Heads at the Greek, 1983.
Unbelievable. One of the very best concerts I've been to.

Jonathan Demme was in the audience, decided to make a concert film with them.

The live concert was much better than "Stop Making Sense".

at Hollywood High Auditorium (Rockpile was there, also), The Specials at the Whiskey...

18. Pink Floyd's The Wall 1980 Tour and Pink Floyd's Animals 1977 Tour.
Although I did get to see Pink Floyd's Wish You Were Here 1975 Tour in Pittsburgh Pa and wish it was recorded and released on DVD.

21. The Doors' March 1st, 1969 concert at the Dinner Key auditorium in Miami.
The infamous "flashing" concert that got Jim Morrison arrested and charged with public indecency.

I'd want to see if he actually did it. Members of The Doors and road crew member say either that they didn't see the critical moment, or knew that he hadn't flashed the audience because either Morrison was NOT going commando under those leathers as he usually did, or that a stage hand knew what he was up to and prevented it.
