I didn't count "M*A*S*H" because that's just plain untouched.
As for realism, I would say that "Good Morning Viet Nam" and "The Wall" probably come closest to capturing what war is really like. You can't help but shed tears in parts of them.

Most Hollywood WW2 movies made DURING the war (say, 1942-1945) are pretty bad. The best ones were made long after the war was over.
A couple of my favorites are:
"The longest day" (1962)
"Tora! Tora! Tora!" (American and Japanese, 1970).
There were also some excellent TV series:
"Victory at Sea" (1952–1953)
"The World at War" (British, 1973)

Some just interesting to watch Away all boats The Pacific (liked Band Of Brothers better) We we're soldiers (meet the Helo Pilot Snake, Bruce Crandall MOH recipient, he said it was very close to the truth.) Whether Gibson was in it is beside the point.
