Coconut cream. (What can I say, I'm in Ohio.)

Two pies, in fact.

I don't know how to "grow" a pie, so I baked the crust and cooked the custard for the insides. Now I am refrigerating.

Tonight at this same time, I'll have pie.

Mmmm. Pie.

I made a mixed berry pie tonight! I was so craving it since it had been all over the board for the last few days....it was so good, all warm and stuff....with Breyers vanilla ice cream....

Give thanks to "Carol H," whoever she is, for the recipe if you like it. This is the first time I'm trying it myself. It just sounded so good and appeared highly recommended.

Warning: Unless you're making deep dish, you may find as I did that the amount of custard this produces will fill well more than one pie shell, so make sure you have two crusts baked up and ready to fill.

I'm also putting real whipped cream on mine just before serving, not Cool Whip. I just love the real stuff.

Edit: I also didn't try any of the suggested variations by other contributors who suggested using coconut milk in the custard. I'll see how this tastes and maybe next time I'll try that.

10. Coconut Cream is my favorite pie on the entire planet. Sigh...

Alas, I am on Weight Watchers right now, and though I'm sure I could finagle a recipe so that it was sensible enough for me to eat without gaining ten pounds, I'm quite sure it wouldn't be as heavenly. LOL
