Obama is back up to 60% in today's Gallup polling. That's up 3 points in one day. He must have had a
really bad polling day 3 days ago that dropped off that had pulled him down to 57%

2. Monday's polling data was about a Sunday AND a Father's day.
The only people polled were probably curmudgeonly male shut-ins with no close family--and guess what side of the political spectrum those guys tend to trend toward?

3. 3 points in one day is most likely within the margin of error -- so it means nothing.
I couldn't see from the link what the actual margin of error is, but a common M.O.E., which is based on the size of the sample, would be 3%. That means that, if a bunch of different samplings of opinion were taken from the population, that 95% of the time the results would fall within 3 percentage points of 60%. In other words, one sample might say 57%, another 60%, and another 63%, all on the same day. So the "real" approval rating from the overall population (as opposed to one particular sample) falls somewhere in the RANGE of 57 - 63% (with a confidence level of 95%).
