I ate a spinach sandwich the other day...

I ate a spinach sandwich the other day...
Okay, so I go into the health food store, and needed lunch. I look around in the on the shelf deli type area, and there's this freaking spinach sandwhich. I swear to you:

Piece of bread
Slice of Mozarella cheese
1" of fresh baby spinach (1" solid!!!)
Tomato slice
Cucumber slice
Pickle
slice of mozarella cheese
Some kinda sauce
piece of bread

I really only got it because I felt like I should be uber healthy that day, but I kid you not, it was delicious!!!

I'm still sitting here thinking of it like 4 days later.

I guess I know what I'm having for lunch.

1. I had a vegan wrap from the Whole Foods deli last spring.
It was heavenly! :) Have a great lunch!

2. I'd replace the pickle with a avocado- but that does sound great!

4.  and here's another variation
instead of spinach use fresh basil.

I've had those before - they go best on a french baguette- crunchy on the outside and airy and light inside. maybe even use pesto as the sandwich spread.
