Festive Pasta Dish For Holiday Pot Lucks |

I'm big on 5-ingredient recipes, also find that they tend to be the best flavor wise!
First broil some red bell PEPPERS until the skin is charred. When they're cool enough to handle, take the skin off. They should still be firm, not mushy but have a sweet/slightly charred taste. Slice those up and put aside.
Boil up some short shaped PASTA (I like bowtie in this) only til al dente though as it will cook a bit more, drain and rinse in cold water.
In a big frying pan, heat 1/4 cup OLIVE OIL with SLICED GARLIC but don't brown it. Toss in a big bunch of SPINACH until just wilted; salt to taste.
Then you are ready to put the pasta & red peppers in the pan and toss this altogether. At this point you aren't cooking it, just combining. I like to put in feta cheese or fresh parmesan at this point but it is optional. Black or crushed red peper finishes it off.
You can serve this warm, chilled, or room temp, that's why it's good for office parties. It's nice chilled on a bed of greens as well.
