Any good salad dressing recipes?
I'm bored with the bottled and would prefer to just whip up my own. If you have a favorite that's quick to make please share it. I am mostly interested in the oil/vinegar type but don't let that stop you from posting yours! Thanks in advance

1. Here's mine.
For the vinaigrette
¼ cup red wine vinegar
1 tbs balsamic vinegar
1 tsp Dijon mustard
½ cup olive oil
Salt & pepper


In a small bowl, combine vinegars, mustard, salt & pepper to taste. Let stand about 5 minutes. Slowly add olive oil in a steady stream, whisking thoroughly

2. same as above but
Use your mortar and pestle to crush herbs and garlic and add to the vinaigrette.

Only use the best quality of olive oil.

5. this is my secret sauce!
1 cup mayonnaise
1/4 cup ketchup
1/8 cup mustard
1/2 cup minced white onions
1/2 cup minced dill pickles
salt and pepper to taste....

(don't breath a word of this to jack in the box...)

6. Here's one
go to www.recipegoldmine.com and search for killer blue cheese dressing.

I'll bet you could eliminate the blue cheese and insert other flavorings, such as herbs, and get an entirely different type of yummy dressing.

8. I have the BEST spinach salad dressing recipe
1/2 cup Mayo
1 Tbsp. wine vinegar
1/4 cup sugar (I use Splenda instead of sugar, no difference in taste)
1/4 cup light cream (can use the non fat type)

2 10oz bags spinach, cleaned
1/2 sweet red onion, thinly sliced
1 hard boiled egg, sliced/chopped
Mushrooms, sliced
Bacon, cooked and crumbled

Mix together w/ french whip, mayo, vinegar, sugar and light cream. Store in refrigerator for at least 4 hours, serve over mixed spinach salad. Dressing will keep in refrigerator for several days.

9. My citrus vinegrette:
Juice of one orange
Juice of one grapefrut
Juice of one lime
1/4 c rice vinegar
1/4 c minced shallots
A squirt of honey, if the fruit is tart
A few splashes olive oil
S&P to taste

Emulsify with stick blender.

10. Yum Yum and more yum. Tahini dressing.
2 teaspoons Tahini

2 teaspoons Lemon juice (amounts vary depending of taste)

Stir briskly to blend (about one minute)

Add splash of water.


And that's it. A tiny amount covers a lot of salad.

(Lots of varitation possible by adding a clove of minced garlic and/or cumin and/or mint)


And need I say that tahini which isimply s ground sesame seeds is extremely healthy.

11. Odd one I came up with last night:
(and sorry for the weird measurements -- but it should give you an idea of the relative proportions)

Deconstructed spring-roll salad:

Dressing:

A spoonful of peanut butter
Two squirts of Thai "chicken sauce" (sweet chile sauce)
A drizzle of fish sauce
A sprinkle of ground red pepper
Thin with milk or chicken/veggie broth until it's the consistency you want

Serve over a salad of lettuce, rice noodles, cilantro, red pepper, cucumber, etc. Shrimp or chicken or beef if you want. (Basically what you'd put in a spring roll.)

12. classic caesar-- here's my recipe....
This is my all time favorite salad-- I eat it more than any other:

1 clove garlic, *pounded to a paste* in a mortar with 1/4 tsp salt
1/2 tsp anchovy paste
1/4 tsp dijon mustard
small splash each of Tabasco sauce and Worchestershire sauce
1 egg yolk
juice of 1/2 lemon (I often add an additional 1 Tbsp raspberry vinegar)

Mix all the above ingredients with a whisk, then SLOWLY pour in 3/4 cup good extra virgin olive oil while whisking vigorously until the dressing is emulsified.

Tear Romaine lettuce into bite sized pieces. Dress and toss (the dressing recipe will do about three large lettuce heads generously). Grate some fresh parmigiano reggiano on, add some croutons, and toss again. Season with freshly ground pepper.

13. caesar salad dressing
this make quite alot, but will keep up to a month { I make it up for Xmas gifts}

I pint mayo
egg beaters {Equal 2 eggs}
1 Tbl anchovy paste
1/4 tsp curry powder
2-3 garlic cloves
1/2 cup parm grated cheese
1 tsp vinegar
Put all ingrd into blender, liquify, and pour into jar or container

Break up Romaine lettuce pour on dressing add croutons and enjoy!!
I sometimes grill chicken breast and slice them thin strips and place on top.
Dressing will thicken as it sets, beleive me it will become your favorite.
