Bought some yummy raspberries |

two small containers and a friend and I ate a few out of one container. What do you make with them? I'm thinking of a homemade raspberry tart, with a crust and using raspberry preserves as a filling. What do you think? I want to stretch it enough to serve four for dessert on Sunday.

My first instinct with two boxes of fresh berries would be to eat them all within 24 hours of purchase. I don't think they'll survive until Sunday -- will probably start to rot.
If you are going to cook them, of course, you'll have more time. But you ought to do the cooking soon in order to keep them from going bad.
My suggestion would be to make them into a sauce with just some sugar and a small amount of water, and not go anywhere near "preserves." A simple cheesecake with a fresh raspberry sauce is yummy. Even a nice vanilla pudding or good ice cream with fresh raspberry sauce would shine. You could set aside a few of the freshest berries on a paper towel in the fridge to keep for garnish.
You could build little individual desserts with something like chocolate shortbread cookies layered with whipped cream and your raspberry sauce drizzled over it.
If you really wanted to "kick it up" you could add a bit of liqueur to the sauce.

Raspberry Crumble
2 cups crushed raspberries Juice of 1/2 lemon 1/4 cup butter 3/4 cup all-purpose flour 1 cup granulated sugar Pinch of salt
Sprinkle berries with half of the sugar; add lemon juice and stir well. Place in a buttered baking dish. Blend butter and remaining sugar, flour and salt. Cover berries with this mixture. Bake at 350 degrees F for 40 minutes.
Serves 4.
I found this on the internet...I have a recipe at home that is similar but I won't be able to post from there. It's easy and very yummy!

Fresh peeled, sliced peaches and fresh raspberries + a bit of sugar. Serve over vanilla ice cream. Or make a peach cobbler and add a handful of the raspberries. I might be tempted to freeze one carton so I could have a special treat on Thanksgiving or Christmas.
Enjoy whatever you decide make with them.....
