I'm wondering if anyone has put cucumber in Chinese stir fry with chicken breast. I've never seen it in a Chinese restaurant, but it sounds in my mind as if it would be good.
I have small, homegrown cucumbers from my garden. Besides the usual green onion, garlic, and ginger and the chicken breast, what else should I put in there? I have yellow summer squash and red bell peppers, both from my garden. Also, I have some cashews. (No, I didn't grow those :))
What kind of sauce would you put on there? I'm thinking hoisin sauce or black bean sauce. I also have some of that murderous Vietnamese hot sauce with garlic.

Seems like the heat of cooking would destroy a cuke, although I don't know this for a fact. But added at the end, it might be nice and crunchy.

i would definitely wait til just before serving to add cuke though
sounds delish! as far as a sauce, I like plain old soy sauce with maybe a touch of ginger or a DROP of the hot sauce :)
if two drops fall, add some sugar :bounce:

I chickened out and skipped the cuke. I did use the bell pepper and summer squash and hoisin sauce. It was really good.
I'd run out of white rice, and the health food store where I work only had brown rice. It definitely added flavor.
