Pot Roast with Guinness Gravy |

My wife doesn't like Guinness but she likes this gravy. Somtimes I add herbs. 12 ounces Guinness Stout 4 to 5 pound chuck roast 2 large onions sliced 2 clove garlic chopped 2 cups beef stock Lard or olive oil for searing.
Pour the Guinness in a bowl to allow to flaten.
Sear roast on each side until browned, remove meat from pan and set in a roasting pan. Slice onions and add to pan along with garlic. Add stock. Roast in preheated oven at 350 degrees about two hr. Add the Guinness and roast for another hour, or until tender. Add other vegetables if desired during the last 45 minutes. Drain the liquid and thicken with arrowroot or cornstarch.
Or cook in a crock-pot.

I don't know if I can sacrifice a Guinness for good gravy. I usually use drink the Guinness and add red wine to the pot roast. Maybe if Santy Claus brings me a few 6-pks. though. Thanks for the recipe.

but I ran out once and had to substitute something so I tried the Guinness. We liked it better. :shrug:
