stuffed salmon from Costco....
Anyone else love this simple meal? I freeze 'em, then pull them out and thaw when I want a great meal without any effort. Thirty minutes at 350 F in a greased pan, then served with a table sauce of white vinegar, fish sauce, and chilis (or just lemon wedges).

1. Ooh, I haven't seen those.
Are they in the freezer aisle?

I love Costco's frozen ahi tuna steaks, and they also have a sinfully rich seafood lasagna. (I love "convenience foods.")

I wish there was one closer to me. I thought I heard they were building one in South Austin -- I hope so. That stuffed salmon sounds great!

4. You know what I love that they haven't had in ages?
The salmon burgers. Easy, tasty and nutritious. All members of my family will consume them. I ran out and went to get more, oh, three months ago, and no dice. Haven't been able to find them since :(

5. I haven't tried the salmon but their seafood stuffed tilapia is awesome
It's in their take and bake section. YUM!!

9. they're really good and easy....
And versatile. I hosted a visiting colleague not long ago, and because the departmental budget doesn't kick in much toward restaurant bills, I decided to cook for him myself. Problem was, I didn't get out of the office until nearly 5:00 and had little time to prep anything substantial before I met him at the local airport. Costco stuffed salmon to the rescue! I picked up fresh bread on the way to the airport, steamed some asparagus and roasted squash at home while I made a quick hollandaise and cooked the salmon-- EVERYTHING tastes better with hollandaise-- opened a bottle of wine, and voila! a great dinner on the cheap.

Will have to look for this, also the stuffed flank steak. They both sound good.And I am feeling rather lazy these days.
