Any ideas for *pretty* Christmas cookies?

Any ideas for *pretty* Christmas cookies?
My mother always makes these candied fruit-bars that are beautiful, but absolutely disgusting. I'm hoping if I can find a recipe for something equally attractive, she won't make those vile things again. :)

Any suggestions?

Sugar Plums
* "Rubies and Emeralds"

1 6-ounce package semi-sweet chocolate chips
1/2 cup sugar
3 Tabsps white corn syrup
1/2 cup orange juice
2 1/2 cups vanilla wafer crumbs, crushed fine
1 cup chopped nuts

Melt chocolate chips over hot water. Stir in sugar and syrup. Blend in orange juice. Add to vanilla wafer crumbs in large bowl and mix well. Chill until firm. Form into small balls and roll in powdered sugar. *For Rubies and Emeralds, substitute red and green colored sugar crystals. Store in refrigerator in air-tight container.

Note: This takes most of a 12 ounce box of vanilla wafers. I've found the best way to reduce to crumbs is to place in a large zip-lock bag and hammer into submission . Rolling the mix into balls is messy. Keep a basin of cool water and some paper towels at hand for frequent rinsing.

5. these sound very "pretty" and tasty too----- Holly cookies
30 large marshmallows or 16 large marshmallows & 1 cup marshmallow crème
1/2 cup margarine
1 teaspoon green food coloring
3 cups cornflakes
cinnamon candies



Heat together marshmallows and butter until melted. Stir in food coloring and corn flakes. Drop onto waxed paper by teaspoons. Add cinnamon candies.

6. sugar cookies, iced and painted with food coloring.
My mother spent half of December doing this.

She used standard cookie dough rolled thin, and used cookie cutters of Angels, Stars etc, always cut out circles for heads to stand away from the background and used Q-tips to paint pretty eyes, blushed cheeks, and rosey lips...

They were beautiful, maybe even works of folk art, but we ate them like they were cheap and easy. :(

I've never met another person who made these although I have to believe that my mother, a great craft magazine reader, got the idea from someone.

7. These are really easy...
Cherry Cheesecake cookies.
I have the exact recipe somewhere but I haven't used it in years so here are the ingredients:

Cream Cheese softened
Sugar (you don't need a lot)
a drop or two of lemon juice

vanilla wafers
butter

cherry pie filling

get some of those pretty X-mas minature muffin liners
crush the vanilla wafers and mix with melted butter then press in the bottom of each liner
mix the cream cheese sugar and lemon and fill the liners

bake for approx 10 minutes @350

when cool top with cherry pie filling.

8. Rosettes are pretty
if you have a rosette iron that is... easy to make. Usually rosettes irons are in the shape of snowflakes, all you do is dip the iron into the batter, dip in hot oil until done, take off iron, let cool then sift powder sugar over them. They look exactly like snowflakes.

The other is Mexican wedding cookies or another name is snowballs. These melt in your mouth just like to rosettes.
