Coconut rice, black beans, and turkey thighs |

I have been craving coconut rice and black beans for awhile, so I made some today. I had about 3/4 c. coconut milk left over from a cake, so I used that to make a gravy for the turkey thighs that I'd roasted. I didn't have any jerk seasoning, so I used garam marsala on the thighs, then "deglazed" the cooking pan with coconut milk. Pulled the turkey meat off the bones and put it in a dish with the gravy. It was very good. Served with coleslaw, cornbread. Was this an international meal or what?
