How to resurrect overcooked meatloaf?
It takes real culinary talent to ruin a meatloaf, but I managed to do so by leaving it in the oven too long. It's dry now. Does anyone have any ideas on how I can salvage it?

sorry bout your meatyloaf. I have a week off at Xmas and i'm making up a dozen of those buggers for the freezer

hubby and I love em, but they are so much work!

but won't cut it up in little pieces.
You'll no doubt consider the source of this info strange, given my recent meatloaf disaster, but mine does usually turn out. I find it easy to make. I make it in the food processor. I first mince the onions, garlic, add egg and spices. Then I add meat and oatmeal and hit pulse a couple of times so as not to over grind the meat. It's easy, but then I need to remember to take it out of the oven on time!

5. my processor isn't big enough
maybe when I had the old Cuisinart, but I have downsized :)

and I know it's easy to over cook them sometimes

6. Next time try this---
Get rid of the Oatmeal--Use Italian Flavored Bread Crumbs instead.
Use a pound of ground pork and a pound of ground beef
Use an egg for every pound of meat

I cook mine on a rack so it doesn't sit in grease while cooking-

I also start with a very hot oven 500 degrees then turn it down immediately to 325 when I put the meat in--I think this helps form a good seal to keep in the juices.

7. You and I cook meatloaf the same.
I slow cook at 350 instead though.

8. I go 2 lbs Beef to 1 of pork
but that is my "adjustment"

great idea for the 500 oven tho......
