Any Yam lovers?
Okay...got tired of the typical yam recipe with marshmallows...so I concocted this...

Mash yams after steaming.
Sweeten with either brown or white sugar.
Mix pineapple chunks and some coconut (your preference on the amount)

Place mixture in a baking pan... cover with pecans and a bit more of brown sugar and perhaps some coconut to brown...

Yummy...

1. Ultra simple sweet potato wedges
Slice sweet potato(s) length wise into 8 wedges. Spray or toss with olive oil. Arrange on baking sheet. Sprinkle on a light dusting of a mixture of salt, sugar and cayenne (mix to your taste). Bake at 400 until slightly brown and puffed on outside and soft on inside.

2. Bake them whole.
When they feel soft to the touch (or tongs) pull them out and let them cool slightly. Then, peel them and mash them with a bit of butter. The baking in the skin really brings out the sweetness. We make this a couple times a month.

5. I don't even use butter
If you use the garnet yams, they're plenty sweet on their own and very soft when thoroughly baked.

I've never cared for those recipes that add sugars or marshmallows. Yams are sweet enough on their own for me.

3. Garlic yams
Some freshly crushed garlic cloves and a bit of butter in some pureed yams = heaven on earth

I will not eat yams with anything sweet on them...yecch!

4. try this...
It's simple and really really good. Slice the yam lengthwise, put in a baking dish. Dab with butter and sprinkle with garam masala and bake until tender.

I bake up a bunch and leave in the fridge. Then slice them in long quarters and heat in the fry pan throughout the week. Usually just dry fry to get them browned. I love the flavor of plain yams, sweet potato - whichever.

P.S. Also, using sweet potato instead of white potato to make french fries is yummy!

8. This came out good...
I baked some yams and when they were soft, peeled and mashed them with butter, a minced canned chipotle chile in adobo sauce (with a spoonful of the sauce) and a little orange juice. The chipotle is pretty fiery so be careful on how much you add, but I really liked the smokey flavor with the heat against the sweetness of the yams.

9. that sounds like a Bobby Flay recipe (food network chef)
He liked sweet potatoes and chipotle and cream baked together.

My personal preference is either baked in the skin and served with butter and a bit of orange marmalade, or made into home fries. Yum.

In New England, I often saw sweet potato french fries.
