what to fix for guests when the House is half packed and you spent all day |

painting the garden gate, packing and making trips to the dump?
Costco to the rescue!
I had invited the guy who sat our fur babies when we went to NM to scope out the new homestead over for dinner and a night of astronomy.
the dining room table was piled high with stuff to be packed after the counter guys left and I worked outside most of the day helping hubby clear the RV parking, making dump runs then finally painting the side gate.
Guests arrive at 6:30, I hit the shower at 5:15 after which I got the table cleared and started digging for dinner (my guest asked what he should bring and I had told him a couple bagettes so I knew we had fresh bread coming)
In the freezer I had a bag of Mesquite Chicken Breasts (9 minutes in the microwave for 7 breasts )and some Organic White corn. I found a couple cans of Ranch Style Beans in the cupboard. so far so good!
In the fridge...., hmmm, half a red onion, three tomatoes on the vine and 1 and a half avacados. Dice the maters, mince the red onion, cube the avocado, add salt and pepper, a couple splashes of Balsamic vinegar and chill
Mesquite Chicken with Ranch Beans, corn, tomato salad and fresh french bread all on the table in 10 minutes! Yummy!
I love Costco :rofl:

People who visit expecting to be fed and entertained by folks who are in the process of renovating, selling and moving deserve takeout served with the utmost informality, even when the invitation was extended with the best intentions possible. You did far more than necessary, IMO.
Besides, Chinese takeout is good stuff, well suited to an informal, "Thank you and goodbye" dinner.
If they show up unannounced, uninvited and hungry, THEN you call for pizza.

i didn't want to pay for Chinese and I have to empty the freezer
otherwise i'd have done it!
