Any ideas on what to do with persimmons?
A friend gave us a bag of persimmons yesterday off his tree. I've never done anything with them and wondered if anyone had any good ideas for them. There's a whole bunch of them and I hate to see them go to waste.

Any suggestions?

3. What kind are they?
Some varieties are astringent and don't lose that quality until they are very mushy soft-ripe. I've seen recipes for persimmon bread and persimmon pudding that would be good for this type.

The flatter Japanese varieties are non-astringent and are sweet and tasty even when they are still firm. With this kind I've made a pretty good salad with sliced persimmons, walnuts and arugula and a simple oil and vinegar dressing.

except don't cook them as long..they are great stuffed in a pork tenderloin
