Pecan pie without corn syrup? |
|
Does anyone have a good pecan pie recipe that doesn't call for corn syrup? I've got one precious bottle of Karo in the cupboard, and it's a pain (and very expensive) to get more of it in the UK.

LIGHT CORN SYRUP SUBSTITUTE
2 c. white sugar 3/4 c. water 1/4 tsp. cream of tartar Dash of salt
Combine all ingredients in a heavy, large pan. Stir and bring to a boil. Reduce heat to a simmer and put cover on it for 3 minutes to get sugar crystals off the sides of the pan. Uncover and cook until it reaches soft ball stage. Stir often.
Cool syrup and store in a covered container at room temperature. It will keep for about 2 months. Makes almost 2 cups.

2. cool! I didn't know you could do that!!! |
|
Can you make dark syrup too? How does the taste compare with pies made with Karo?
I think I found a new way to impress my non-cooking friends;-)

5. Thanks, I'd seen that recipe, but didn't know if it would work. |
|
I guess it would, though, if I can get the consistency right. I'll let ya'll know how it works.:)

4. Don't you have golden syrup in UK |
|
I thought I remember you have something comparable but with a different name?

6. Yes, but it doesn't seem to work quite the same. |
|
Maybe because it's a cane product instead of corn? I vaguely remember reading that this is the reason why Coke tastes different in the UK.
Golden syrup seems to be thicker than corn syrup, and grainy, and (if this is possible) too sweet. I have tried golden syrup as a substitute for corn syrup, although not in pecan pies. The results weren't great, although that very well could have been the fault of my cooking, not the syrup.

7. Maybe you can try this |
|
What if you added some molasses to the golden syrup? That would give it a richer taste and maybe cut the sweet taste a bit. It won't loosen up the texture but may give you a result closer to what you want.

8. It's worth a shot, thanks. |

I think treacle is pretty much the same thing as molasses? I have some treacle.
