Potato Pancake recipe
My mom used to make 'em when I was a kid, and I remember them being fairly easy to do - I even did it myself once or twice. But I can't for the life of me remember how.

I remember mixing a bunch of stuff in the blender, then just pouring them em onto the griddle.

I'm craving them - anybody have a good, simple recipe? Thanks.

1. here's what I do
I grate potatoes (I use yellow finns or yukon golds-russets are fine too) and an onion. Soak potatoes in cold water for at least a half hour-this removes some starch. (reserve water) Then I take the potatoes and squeeze them in a clean kitchen towel to get as much moisture out of them as possible. Put in large bowl add onion. In a separate bowl I beat an egg (or two depending on how much I'm making) I add flour (about 1/3 of a cup, teaspoon of baking soda and potato water to make a thin pancake like batter. I add this to the potato and onion and combine.

I fry in peanut oil but canola works too.

To a cold pan add oil-about 1/3 inch. Heat until very hot but not smoking. Drop pancake into hot oil and fry until crispy and brown. Try to turn these only once.

Salt liberally when they come out of the pan

Serve with applesauce and/or sour cream

3. That's what I do
I skip the soaking, though. The starch helps them to stick together.

4. If you soak though
The pancake will be crunchy and crispy. I find my final result when I soak just seems to get that snap that I like

5. Okay, you convinced me
I may try that. BTW, potato pancakes are one of the very few things I love katsup on.

Thanks for the thread. I haven't thought about potato pancakes for an age. Maybe I'll make some.

8. My recipe is very similar to yours
Though this year, I cheated and used the precut potatoes (Simply Potatoes) you find in the refrig section of the grocery store. I rinsed 2 packages of potatoes, added 4 eggs, grated onion, salt, pepper,and matzo meal. I fried them in vegetable oil over medium high heat. Hubby said they were the best latkes he'd ever had and I've been making them for years.

2. We always used leftover mashed potatoes.
I don't think my mother even added anything to them, except maybe some milk if they were pretty stiff. They didn't pour, though -- she flattened them out like hamburger patties and fried them in butter.

I hadn't thought about potato pancakes in years! Thanks! :D

7. I just made some of these two nights ago
I added some cheddar cheese, grated onion, and a pinch of cayenne. They were tasty.
