Seeking: Carrot Cake Recipe. Can You Help?
:)

Carrot cake is one of my favorites but I don't have a recipe.. can cake isn't the sort of thing that one can just grab any ole recipe and be certain it'll work.

P.S. Hopefully without coconut.

Carrot Cake
3 C. grated carrots
2 C. all purpose flour
1 t. baking powder
2 t. baking soda
1/2 t. salt
2 C. sugar
1 t. Cinnamon
4 eggs, well beaten
1 1/4 C vegetable oil
1 t. vanilla


Combine first 7 ingredients; stir in eggs, oil & vanilla, mixing well.
Pour batter into 3 greased & floured 9 inch round cake pans.

Bake 350° for 30 min or until toothpick inserted in center comes out clean. Cool in pans 10 min. then cool completely on racks. Spread frosting between layers & on top

Cream Cheese Frosting
1 (8oz) pkg. cream cheese, softened
1/2 C butter, softened
1 (16oz) pkg powdered sugar
1 t. vanilla
Combine cream cheese & butter, beating until smooth. Add sugar & vanilla, beating until light & fluffy.

You can add 1 C. of pecans to the frosting. If you do, add it after the frosting is completed & stir them in.

4. I like this recipe
I prefer cooking the carrots and mashing them to grating them.

4 eggs
2 C sugar
1 1/2 C canola oil
3 C flour
3 tsp. baking powder
2 tsp. baking soda
2 tsp cinnamon
1/4 tsp salt
1 # carrots - cooked and mashed
1 C chopped walnuts

Beat the eggs then add sugar and oil. Mix well and add four, baking powder, baking soda, salt and cinnamon. Add mashed carrots. Fold in nuts.

Grease and flour a 10 inch tube pan before pouring batter in. Bake at 375 degrees 45 min to an hour. Leave in pan to cool. When cool invert cake onto a cake dish and frost with cream cheese frosting.

Cream Cheese Frosting

3 oz cream cheese
1/3 C butter
2 C 10X sugar
1 tsp Vanilla

Cream together cream cheese and butter. Add sugar and vanilla and beat until creamy.

5. Here is the one I use
Okay, but I use a very deep baking/cake dish. Also, Joy has a good recipe too . Anyways, this is from the 70's:

Sift together the dry ingrediants:

2 Cups Flour
2 Cups Sugar
1 tsp. Salt
2 tsp. Baking Powder
2 tsp. Baking Soda
1 heaping tsp of each: Allspice, Nutmeg and Cinnamon
1/2 tsp. ground cloves

To dry ingrediants add:
4 eggs, beat in one at a time
1 1/4 Cup Oil Crisco is fine, Canola works too
1 tsp. vanilla

Mix in:

2 Cups Grated Carrots (about 1 bag)
2 Cups chopped Walnuts

Pour into greased and floured deep baking /cake pan

in a pre-heated 350 degree oven for 60 minutes, test with toothpick in the center for doneness.

Icing:

2 8-oz. pkg. of cream cheese
2 sticks butter
2 tsp. vanilla
2 boxes of powdered sugar

Cream together the cream cheese and butter and vanilla. Gradually add the powdered sugar, until creamy texture and ice the cake!

Top with pecans or walnuts !!!!

P.S. Any extra frosting can be frozen. PLEASE use a very deep baking pan, the measurements on mine are :14" length, 3" deep.
