4. Here's one of my favorite recipes: |

It's easy, pretty, and perfect for hot summer days since there's no cooking.
Three Tomato Chicken Salad
3 red tomatoes 2 yellow tomatoes 1 pint grape tomatoes 4 green onions, chopped 2 cups chopped cooked chicken (get it from the deli) 6 cups mixed lettuces 1 avocado 1 tablespoon lime juice 2 teaspoons chili powder 1/4 cup buttermilk 1/2 teaspoon salt 1/8 teaspoon pepper
Slice red and yellow tomatoes and arrange them, along with the grape tomatoes, green onions, and chicken, on lettuce. Peel avocado, remove pit, and cut into pieces. Place in blender or food processor with remaining ingredients. Blend or process until smooth, then drizzle over salad and serve.
Serves 4

I eat a lot of chicken and turkey because it's heart healthy. I love fresh veggies and salads. I use a lot of ground chicken to make things that I used to make out of beef or pork. I still eat some beef and pork though.
Last weekend all my grandkids were here and I made them Schaschlik mit Pommes Frites and put beef, pork and bacon in it and it was a real hit. I cooked for 9 people and made a double batch of the stuff and I had very few leftovers the next day.
I'd searched for the Schaschlik recipe for about 25 years and finally found it on the internet. I ate it in Germany years ago and now I finally know how to make it. I'd made the kids some at Christmas time and when I asked them what they wanted me to fix last weekend, four out of four of them voted for Schaschlik mit Pommes Frites.
If you folks don't have the recipe I'll share it with you when I get time to type it all up. The lady that I got it from was from the part of Germany where I had lived and she knew how to make it exactly the way I remembered it. I've found several variations of the recipe on the www, but none were like this. The lady gave me the recipe and about a week later I made some and it was perfect. About a week after that, I emailed the lady to thank her and to tell her how great her recipe was and her daughter told me that her mom had died the week before. It's a sad story, but I know that, anyone who knew how to cook like she did, probably didn't have a problem getting into Heaven.
