Cranberry Steamed Pudding .. Here Goes

Cranberry Steamed Pudding .. Here Goes
one of my mom's old holiday traditions.

for the pudding (cake, really)

1 1/2 c cranberries, cut 2x
1 1/2 c flour
1/2 c molasses
3 T sugar
1/2 t salt
1 egg
1/3 c hot water
2 t baking soda

mix sugar, egg & salt. add molasses. disolve the soda in hot water and stir it in. add flour. stir. add cranberries and do the same.

Because I don't have a double boiler, let alone one that's the right size, I'm steaming it in a coffee can set in a pasta steamer. 90 minutes.

Sauce:

1 c sugar
1/2 c cream
1/2c butter or margarine

heat that up and serve it over the pudding.

2. my family serves something similar
It's a baked cake like dessert: flour, milk, small amount of butter and sugar, cranberries, baking powder--bake for a half hour and then the same sauce you mention. Margarine is definitely not an acceptable substitute in this sauce.

5. Lots of variations around
At a friend's house, they served a plum pudding that was very similar in texture.

I did find out though, that unsalted butter would probably be better. It was definitely tasty though.

3. so you steam this in a double boiler for 90 minutes?
I have a double boiler that would be large enough to steam this...

I may send the hubby out for molasses and cranberries just to try this..

and it was wonderful.

I put a slice of wax paper over the top of the coffee can and secured it with a rubber band before dropping it into the steamer.
