What are you making for supper on 9/6? |

I am so tired and the day is only half over. (think I pushed myself too hard working out) We had a decent amount of beef and rice left over from the tacos last night so the kids will finish that off, I am sure.
Before it is all over I am sure I will marinade chicken breasts in a garlic mix of some sort. Maybe have some corn and spinach. I always make spinach when the boys do not eat what we are having. They hate it and we enjoy it very much.
What are you whipping up?

NY Strips from our organic locally raised Angus beef Potatoes and green onions in foil with butter Grilled Zuccini and Yellow squash with EVOO and Mrs Dash Mushrooms sauted in foil with EVOO, Butter, Beefbase and a dash of Balsamic Vinegar

I was drooling with the rest.
We bought ours at KMart last year. Not sure what type - it is all hubby's. It does have a small bit of extras like a side burner.

I looked up the rain statistics for the city I lived in in Canada and told hubby it rained there about a third of the year and that did not count snow or just plain overcast days. Hubby said that that was not a statistic people would normally look for. I miss my old home. (and the rain and snow)

If I tell you, honestly-----
I don't cook a thing!
It's usually prepared food from Dean and DeLuca or Balducci's, etc.
Or, even more pathetic --- It's Delivery.
I live alone now, so I'm just too lazy to cook for myself. Also, if you ever saw the size of a typical NYC kitchen, you'de plotz!
But, I've always been obsessed with good food. In fact, my son inherited this trait from me, and is now a Graduate student in NYU for Food Science. Only difference is he cooks up a storm. Saturday afternoon he's invited a group of us over for an "English Tea". He'll be baking scones and cakes and chocolate truffles.
So, please, can I stay here? This is my favorite part of DU.

I have not seen anyone flamed or put down in any way. As AZ said, everyone is welcome. I am basically here for the friendly company and to live through others. I am on a diet right now which means I basically eat grilled chicken and veggies. My imagination is feeding off all the dishes everyone is making. I feel kind of boring in comparison!!!

This makes enough for my 7"x11" Pyrex casserole dish; we call it 3 servings:
For the burritos, we mix: 1 16oz can refried beans (vegetarian, because Sweetie is) 1 19.75oz can 'La Costeña' whole black beans (pour off liquid) 1 cup grated sharp cheddar 1 cup grated quesadilla cheese (Cacique brand) 1 tbs flour, for thickening (if necessary)
Fill flour tortillas (Sweetie adds pickled jalapeño slices to hers) roll, and fill the greased/floured baking dish with them.
Blender-made SALSA VERDE: 1/2 of a med. red onion 4 or 5 large tomatillos 1 small Anaheim chili (4") with seeds 1 clove garlic, peeled 1 cup fresh parsley 1/4 cup fresh cilantro 1/2 tsp cumin 1/2 tsp salt 1/4 cup olive oil 1 1/2 tbs lemon or lime juice
I just give it heck in the blender until it's smooth, then add extra salt if it needs it(usually does). This is a fairly mild heat; another pepper or some cayenne from the spice rack will pep it up if desired. It's pretty watery, and thickens as it cooks.
Pour the salsa evenly over the rolled tortillas, then top with another 1/2 cup of each cheese.
Bake 30 minutes at 350; the sauce should be bubbling and the top cheese a nice toasty brown when it's ready.
Sour cream on the side.

I haven't raided the freezer for inspiration yet. I'm not in the mood for real cooking tonight either, and not very hungry in any event. Nights like this I often skip dinner altogether. Or make a salad, which just struck me as just what I want.

I got through less than half of what we'd picked, which made exactly seven quarts of pie filling. So Friday will be more of the same, I'm sure. (Tomorrow, I'm having a nice day in the park in Boulder. I'm taking a picnic lunch, and my crocheting and an audiobook and I'm going to enjoy the day off while I wait for the company I contract for to write my check so I can get it to the bank tomorrow. So I think we will actually be having food tomorrow night instead of my usual canning day meals - i.e. whatever we can scrounge.)
