Want something that will warm you up on a cold day ? It's arroz con pollo.
You need



Brown your drumsticks



While the drumsticks are browning dice you green pepper, onion, and garlic coarse. Garlic is optional but I'm a garlic head.



Fry some rice in a little olive oil with your onions



Add the rest of your veggies(except the garlic)and cut the tomatoes into chunks before adding them. Use the tomato juice and let this simmer about 5 minutes on low



Put the drumsticks in and the garlic



Pour in your chicken broth. Use a lot because the rice really soaks it up. I used 5 cans. I hate arroz con pollo if it isn't juicy.



Put a lid on it and let it simmer about 1 1/2 or 2 hours on low to medium low. Slow simmer is the secret to this dish.



This dish tastes good the next day too.

1. What a strange coincidence.
That's what we're making for dinner tonight. We use Craig Claiborne's recipe, though, which uses a whole cut up chicken, paprika, saffron, oregano, pimientos and artichoke hearts. And yes, it's lovely on a cold evening and great left-over! Reminds me of a winter vacation in Mexico many years ago...

2. I have used my Cuban grandmother's recipe
we use leseur peas, pimientos and chicken breasts in ours.. and a bit of saffron too :)
