Hi all. I am making my first sweet potato pie. Well, actually it is my very first pie ever. What I am looking for are any helpful hints that I can't get from a recipe, ya know stuff that only comes from experience. Any info is welcome, I'll even take recipes if you like. Thanks.

variety that bakes up with the almost custard-like consistency. They make the smoothest filling and the color is much prettier than the sweet potatoes with the yellow flesh, IMO. If you use the canned sweet potatoes, be sure to drain them well and consider that they will have more moisture than those you bake yourself and may not need as much sweetener since most of them are packed in a sugar syrup.

I SUCK when it comes to sweet potato pie...I can cook so many other things, and so well, but this is one of those things I have never been good at (along with layer cakes, I suck at that too)...I can make a lot of other pies but it seems my sweet potato ones always fall just...not quite right
My personal secret? GFS, Chef Pierre, sweet potato pie....just the right amount of spices to make it not super sweet, and really light, also amazingly good.
