Sharing the world's best pecan pie recipe (just in time for Thanksgiving)
My mom got the recipe from an elderly neighbor of ours many years ago--it makes the BEST pecan pie, and is astonishingly easy to make.

Pecan Pie

3 eggs
1/2 stick butter
1 cup blue label karo syrup
1/2 cup sugar
1 Tbsp vinegar (white or cider)
1 tsp vanilla
1/4 tsp salt
1+ Tbsp half & half
1+ cup pecans
pie crust

Whisk 3 eggs in a large bowl. Melt butter & beat into eggs. Whisk in sugar. Add karo and all other ingredients, pour into unbaked pie shell. Bake 10 min at 400, turn down to 350 for 40 minutes. Let cool at least one hour before cutting.

1. Karo syrup! Haven't used that in years.
My mother made pecan pies with Karo too.

2. Just make sure it's the blue label dark karo, and not the green label dark karo.
The blue is much milder.

I don't know if it's because there's a touch of vinegar in it (that's my guess), but this pie isn't as cloyingly sweet as a lot of other pecan pies I've tasted.

This is pretty much the recipe I use. For a ridiculous twist I add a cup of toasted coconut and a half bag of good chocolate chips.

5. That looks awesome!
My dad's developed an allergy to tree nuts AND kidney problems that require him to watch his potassium intake, so Thanksgiving dessert (my job) will necessarily be of the apple/pear variety.

But I want to make that pecan pie sometime.
