Left-over sweet potatoes?
I over-estimated the amount of sweet potatoes people would eat yesterday (I do my big dinner on Saturday): any suggestions - aside from pie? I have leftover pumpkin pie, but I don't think that will be a problem.

1. They must not be candied
because that wouldn't be a problem. You could just freeze them if there were that many. You could make mashed sweet potatoes or potato cakes.

2. Make a batch of quinoa and season it with a nice curry-type spice or...
...garam masala. Add slivered almonds and cut-up, warmed over squash, toss gently and spread it into a shallow dish. Dab it with mango chutney and put it under the broiler for a couple of minutes.

YUM!!

5. Okay I just made these, pretty good
I didn't have whipped cream, which is just fine for my diet. I also used half whole wheat and half regular flour. They even have that salty baking powder taste of shortcake. And fast too. Definitely a keeper.

Then you can serve it with a light Alfredo sauce with some Walnuts or Pecans.

7. How about sweet potato pancakes?
If they're whole with the skins - I saute onions in olive oil and add sliced potatoes to brown a little as a side dish with chicken or pork chops.

8. Add some green beans too,
a little rosemary and thyme - yum!! It's really good in a foil packet on a grill.

I usually stick with the garlic and black pepper. But rosemary and thyme sound great. Now I have to go buy some more sweet taters.
