1. Free form bean & collard green soup
with pork chops, red, black, & garbanzo beans, hominy, Rotel classic, onion, garlic, carrot & celery. Full of protein, B-vitamins, potassium, A&C, and anti-oxidants galore. I'm checking the cornbread thread next to go with. Always to have roast beef around over a weekend! TGIF!

Have I mentioned I love beans? Sounds yummy yellerpup!

I haven't added my cornbread to the thread yet, mine is a lighter cake-y cornbread with maseca instead of cornmeal.

I had a bunch of errands to run when I got off work today. Went and visited with the husband of my friend who passed away the same day as Longhorn, took him some eggs. Then stopped for some groceries and went and got some raw milk for me and sazemisery (we're gonna meet up tomorrow!)

Bill isn't terribly hungry so I took a couple of slices of Ain5 bread I baked last night and spread it with garlic scape pesto, provolone, baby bella mushrooms, marinated artichokes and topped it with some shredded Organic Valley cheese. It's in the toaster oven as we speak.

I'm tired and it's still very hot and there are thousands of ladybugs all over the inside of the house. I can't even begin to tell you how many there are! :wow:

Not in the mood to mess with much. Glad you're feeling a little better today. I worry about you. :hug:

We have them every year but they are really out of control this time. I even check the inside of my coffeemaker when I brew a pot.

They are everywhere you lay a hand or even look! This happens about every five years and it's not usually a very big deal. This is the worst I've ever seen it! :wow:

18. We have them every year. And so does a neighbor.
We have a lot of volume for such small square footage - a lot of our house is under a 27'ceiling - so they don't crowd us out, but I am always checking my drinking glass and the water well for the coffee maker to make sure I'm not about to swallow one or cook it.

Our first year was the worst, but this year has been pretty active too.

20. I burned myself out a few years ago. EVERY Mexican meal was fajitas
for me, for about three years. Now I'm stuck on homemade tamales and enchiladas with black beans. :)

11. That is my absolute favorite way to eat a burger!
Topped with crumbled bleu or gorgonzola, bacon (sometimes, not always), dill pickle slices, and a slice of red or sweet yellow onion. :9

Bill had a coupon for a free Sauer's Roast Beef seasoning packet and bag so we tried it. I usually don't use packaged seasoning, but I remembered that my mom used cooking bags years ago so we tried it.

Veggies were delicious, but the beef was very tough. We'll hack it up and make hash out of it.

16. Meatloaf and green beans with slivered almonds
Oatmeal/beef Meatloaf

Ingredients:

1 ½ to 2 pounds lean ground beef (the leaner the beef, the less shrinkage)
1 cup uncooked oatmeal
1 whole fresh lightly beaten egg
2 large minced cloves of garlic
1 8 oz can tomato sauce or ketchup
½ teaspoon of sea salt
¼ teaspoon of fresh ground black pepper
¼ teaspoon of chili powder
1 tablespoon Worcestershire sauce
¼ teaspoon dried oregano
¼ teaspoon dried basil
½ teaspoon dry mustard
2 cloves garlic, minced
1 small onion, finely chopped (about ¾ cup)

Cooking Directions:

Preheat oven to 350 degrees.
In a large mixing bowl, mix the beaten egg, Worcestershire sauce, tomato sauce, minced garlic, sea salt, ground pepper, mustard, oregano, basil and chili powder thoroughly.
Add the uncooked oatmeal, mix and let the oats absorb liquid for 10 minutes or so.
Add the ground beef, mashing and spreading the ingredients evenly throughout it.
Grease a glass or metal baking or bread pan, or use the nonstick variety.
Spread the mixture thoroughly in the pan.
Bake for 1-1 ¼ hours or until internal temperature reaches 160.

Some people prefer milk or hot water to the tomato sauce, and add sage instead of the basil and oregano. Bread crumbs can be used instead of the oatmeal, and some of the beef replaced with lamb, pork or turkey. I used the KitchenAid flat beater to mix all the ingredients except the ground beef, and switched to the dough hook to blend the beef in.

Makes 8 good-sized slices; four meals for me and DH.
