http://www.bakingandbooks.com/2007/09/22/simplicity-48-hours-in-the-making/It only looks like lots more work but it really isn't. It's extremely easy and the texture is worth the few extra steps. :hi:

I'm now 11th on the list so it should be soon for that one.
I'd like to try the spelt since I look for that at the grocery. But the photo of dipping the bread in the soft boiled egg looks so good. I'm a fan of soft boiled or poached eggs when I use whole eggs. How tempting.

But I really needed to find a recipe that has all the whole wheat Bill wants and the texture I could endure. This filled the bill (no pun intended! :rofl: ) and then some.

it makes you feel more comfortable but I really think it isn't necessary if you really want wheat bread. I love a good crusty white once in a while myself, but Bill pretty much insists on wheat. He usually prefers it kinda dense but we were able to meet in the middle on this since it was so good.
I hope you'll file it away for when you do feel like doing it because it's the softest one I've found yet. :hi:
