I whipped up this recipe myself because I wanted something easy and quick. It is pretty tasty considering the little amount of time required.
Floogeldy's Mexican Rice
1 1/2 cup water 1 bullion cube 1 pat of butter Paprika Cumin Chili Powder Onion Powder Garlic Powder Small handful of mixed, frozen vegetables 1 1/2 cup Minute Rice
Put all ingredients, except the rice, in a medium sized sauce pan. Obviously, I don't measure the spices or vegetables. I just put a few good shakes of each spice in and a very small portion of vegetables (I use Green Giant brand frozen mixed vegetables, which contains green beans, corn, peas and carrots). Bring water, butter, bullion cube, spices and vegetables to a boil in the sauce pan, covered. Immediately pour in the rice, stir five seconds, put the lid back on, and cook according to instructions on the Minute Rice box.
This dish does not come out salty or spicy hot. You may want to salt and pepper to taste.
Of course, I'm open to suggestions on how to improve this dish. :)

3. it's adds yellow color and is one of the base spices used in curry |

it's sorta a "poor man's saffron" with a gingerish pepperish taste
often used in spanish rice

....a bit of chopped bell pepper and diced onion. It just seems to be the thing usually in Spanish or Mexican rice.

Well, I did it a few times. I may have stopped just because I'm too lazy to chop. :-)
