I don't post often, but this is a wonderful cake. It's easy to make. It works best if you use a glass pan to cook it in. I hope you will give it a try.
Gooey Butter Cake
1 (18.25 ounce) package yellow cake mix 1/2 cup butter, melted (or margarine - butter tastes the best) 2 eggs 1 teaspoon vanilla extract
1 (8 ounce) package cream cheese 2 eggs 1 teaspoon vanilla extract 2-1/2 cups confectioners' sugar
1. Preheat oven to 325 degrees F
Making the crust: 2. Mix cake mix, melted butter or margarine, 1 teaspoon vanilla, and 2 eggs with a spoon. Pat into a glass 9 X 13 inch pan. This will be the crust and I don't go up the side with this. Just press into the bottom evenly.
Making the cake: 3. Mix cream cheese, 2 eggs, and 1 teaspoon vanilla with an electric mixer. Slowly beat in confectioner's sugar. Pour over cake layer. You can make this sweeter by adding more sugar if you want.
4. Bake for 40 to 45 minutes. I keep checking my cake it's suppose to be a light tan color not brown like most cakes. Cool.

It is a great cake. Have you tried Paula Dean's pumpkin version? I like it better than pumpkin pie!
She also has a chocolate version, too, I think - but again, my thighs. ;)

My husband says this cake is awful, because he cannot stay out of it. I love it too. I want to try the Paula Dean recipes too. Thanks for the link. Now, I'm really gonna be in trouble.
