Is There a Cake Fixer In the House?
Ingredients
8 eggs yolks
3/4 cup butter
1-1/4 cups sugar
3/4 cup milk
2-1/2 cups sifted cake flour
2 tablespoons Bourbon
1/2 teaspoon lemon extract
4 tablespoons double action baking powder

Cooking Instructions
Cream butter and add sugar gradually. Beat the mixture until it is light and creamy. Beat the yolks one at a time and add Jim Beam® Bourbon and lemon extract. Resift the flour with the baking powder. Add the sifted ingredients alternately with the milk in four additions. Beat the batter smooth after each addition. Pour into greased and floured pans and bake at 350 degrees for 30 to 40 minutes until done.

Here's what happened: between all the eggs and 4 - 4! - tablespoons of baking powder, it started cooking almost while I was greasing the pans! During cooking - before it got to 30 minutes - the centers fell.

Any ideas on how to fix?

1. Four tablespoons of baking powder has to be a misprint.
:wow: The only thing I can think of is: If the rest of the cake is ok, then cut the centers out, ice the cake and fill the center with fruit, pudding or some other filling. :shrug:

2. Have you tasted it. I agree that there is a typo in this recipe and that the excessive
baking powder has made it taste pretty funky as well.

I am not sure this is salvageable, but hop you report back.

The taste is fine, doesn't seem overly dry, but it falls apart under the frosting knife. Not pretty at all.

7. fold cake chunks into whipped cream w/ bit of liqueur
orange liqueur like triple sec or grand marnier would be delish.

Turn into a pretty bowl and chill a couple of hours. Garnish with chocolate curls or strawberries.
