I took a standard recipe for ham hash and tweaked it.
I used two pounds of small blue potatoes and went to the butchers for a one-pound smoked pork loin.
The usual bit, boil potatoes for 10 minutes, soak in cold water, 1/2 inch dice. One medium/large onion finely diced, One green bell pepper 1/2 inch dice. Fry onions in 6 TBS butter 4 mins, add onions 2 mins, and then the rest of the ingredients for 10 more minutes.
I made a double recipe as I knew this would go fast.
