Interesting bruschetta twist
So, my SO and I were looking for a place to have dinner Saturday night. Our first choice, an Indian place that he had remembered from .. how long ago?!? wasn't there any more. *sigh* How often does this happen to you? The landscape of your mind needs serious updating?

This place used to be near Duke and now isn't anymore. So, we chose the pizza place instead. I hadn't been there before, but it's always fun to try a new place. I ordered the bruschetta appetizer. Yeah, bread makes me feel lousy, but it was only three pieces. I thought I'd deal with it. It was the usual college hang out, some groups of friends, some couples obviously out on dates. ;-) Oh and I have to give a nod to the cartoony bas relief versions of Sistine Chapel scenes. :rofl: It's like every italian restaurant everywhere... on steroids. :D

When the appetizer came, it was fresh tomato, basil, olive oil... and tofu, all nicely small diced. Yes, tofu in with the tomatoes and basil.

I really liked it! :thumbsup:

It made the bruschetta more of a meal by itself. And I discovered I like tofu with italian seasonings. I will think of doing this at home from now on.

1. All it takes for tofu is to have it well prepared, just once
and you discover it's not the demon substance you thought it was.

Just dust it with a little cornstarch before you try frying it, m'kay? Makes all the difference in the world.

2. I don't hate tofu
I've eaten it plenty before.

I just never thought about putting it in italian food, that's all.

3. I've made tofu Parmagiana
Take slices of tofu dip in egg wash and coat in bread crumb. Fry up and layer with sauce and cheese.

It's really yummy....
