This is by far my favorite Spring/Summer dessert. So, I wanted to share my recipe (my mom's, actually ;-)) because it's no-fail, very easy & absolutely delicious. Of course, you could substitute other fruits like raspberries, cherries, peaches - but I don't recommend strawberries. They basically just disintegrate.
Here goes ... hope you try it!
This is for a 9x9 or 8x8 square pan - I almost double the recipe for a longer baking dish.
Preheat oven to 350.
Put as many blackberries as you'd like in the bottom of your pan - at least enough to cover the bottom & then some.
Batter - mix the following: 1 stick butter (softened) 1/2 cup sugar 1/2 cup milk 1 cup flour 1 tsp. baking powder 1/4 tsp. salt 1/4 tsp. vanilla
Spread mixture on top of blackberries.
Glaze - combine the following: 1/2 cup warm/hot water 1/2 cup sugar
Gently pour over top of batter.
Bake for 50-60 minutes ... until golden brown. :9 Smells so yummy & Summer-y while cooking. :hi:

I used to live in both Carolinas and in Tennessee. Blackberry (cherry, peach, bluberry, etc.) cobbler was a staple, and nearly a food group.
This looks wonderful!

Pretty effect, and good, too. :) I just use a lazy-day cobbler recipe,though.

I'll have to try it. Do you use fresh peaches ... & if so, do you wait till they're a little soft? I've never baked w/ them before.
BTW, I made the above recipe just now & it's smelling great. The market also had some fresh red raspberries & I though it would be great to combine them w/ blackberries sometime, too.

Seems like a softer peach would cook up a little better/faster. Here's to experimentation! :toast: :9

I almost never bake pies because cobblers are just as good and about half the work.
Isn't it rubarb season? Rubarb cobbler anyone? Mmmmmmm........ :9
