It's too danged hot to bake potatoes (and I refuse to turn on the a/c yet) so we're grilling pork chops tonight. Hubby has to have potatoes for some reason with them. :silly: So can a do my usual prep for the oven, wrap in foil, etc? Or is there another way I should prep them? And how long do they take on the grill? Thx!

1. This is how my husband does it. |
|
Sometimes he slices the potato, sometimes he cubes it. He covers them in olive oil and season how ever you like. Not sure how long it takes, he just grills them, sampling them until they are how he likes them LOL They are delicious.
Also, you can cube them and put them in foil packets with butter and spices and throw the packets on the grill.

2. An hour before you plan to eat, scrub the potatoes and wrap them |
|
in foil (or not, if you're the type who doesn't eat the skin). Lay them in the hot coals. About 10 minutes before you start the chops, add more coals and allow them to come up to temperature. Grill as usual, fish the wrapped potatoes out of the coals and enjoy. They take about an hour to bake this way.
An alternative method is to cut the scrubbed potatoes in half, brush them with olive oil (or Italian salad dressing rich in oil) and put the cut side down on the grill rack. They'll take about half an hour to cook this way, and it's best to do this with a grill that closes. They'll have a smokier flavor done this way, too.
Or you can wimp out and "bake" them in the microwave, cut them in half, scoop out the potatoes, mix them with sour cream or cheese, refill the skins, and put them on the grill next to the chops as twice baked potatoes, again with the smoky flavor the grill imparts.
If you have a gas grill, use the microwave. It's more economical.

3. AZDD6's famous BBQ taters |
|
Red Potatoes (regular taters work fine too) Onion Mrs Dash Seasoning (Onion Soup or Ranch Dressing mixes work also) Pepper Butter
Scrub and slice taters, slice onion and break out the rings. Take a large piece of foil, fold in half so it's double thickness.
place taters, onions, seasoning and lots of butter pats and seal in foil
BBQ for about 30 minutes turning it every 10 minutes (start these before you throw the meat on cuz it will take longer than a steak or chop)
YUMMMMM, you'll love em!

that I just saw a video of online.
Wash and quarter Yukon gold potatoes.
Marinate overnight in a cup of olive oil infused with roasted garlic, the roasted garlic, zest and juice of one lemon, and 3 sprigs of rosemary. The next day, reserve the lemon zest, rosemary and garlic and grill the potatoes over a hot grill until the char marks are establixhed. Put into a baking pan and finish for 15 minutes in a 450 degree oven. Add the reserved lemon, rosemary and garlic, season with salt and pepper, and serve.
Seems like a lot of trouble to me, especially the part about finishing in the oven and heating up the kitchen, but oh well.

5. No reason ya can't do these on the grill |
|
http://www.democraticunderground.com/discuss/duboard.php?az=view_all&address=236x8241True enough, they get done entirely in a pan on the stovetop. But they could just as easily get done of the grill in the same pan (if you insist on being outside). That said, they don't really heat up the kitchen like your oven does. And honest-to-all-get-out ..... these were to die for!

We've done potatoes on the grill a couple of times since I first posted. Plus fresh corn and cut veggies on a skewer. Yummmm. I love summer. We do most of cooking outside this time of year lol. I think tonight we'll do sweet potatoes on the grill lol. :D

in a crockpot. Rub them with olive oil and put them in a crockpot (low) . I've not done this recently but did years ago. I would put them in a crockpot before leaving for work when I came home they were done. Check your crockpot recipe book.

8. I like to parboil new potatoes |
|
and then skewer them and oil them up, then put them on the grill. If you don't cook them a little before hand, they take too darn long!

is to coat the potatoe with olive oil, cut in half on the wider side. Score crisscross lines on the cut surfaces, coat with butter and a pinch of pepper. We place them on foil on the hangy down shelf in the Q. Depending on what's cooking we judge for 30 min or so depending on size of tater, temp and time.
