BBQ is slow-roasted pork shoulder or ribs cooked for hours in a smoker with green Hickory wood.
Served to the table in chunks (not pulled and sauced) with sauce as a side, and also cabbage slaw (mayo not vinegar) and white beans (mix some sauce in your portion if you want, but not the whole pot). Southern yellow cornbread (unsweetened not yankee sugar cornbread) A glass of sugar with Tea over ice (mint or lemon allowed as garnish)

Texans think you can make it with beef but Texans think a lot of bullshit. (see G.W. Bush)

Some think you can make it with chicken, but that ain't BBQ either. It's chicken cooked BBQ-style
