(11,658 posts)I don't have fresh milk all year. I dry the girls off January through March when they kid again. I freeze extra milk throughout the year in ice cube trays for my wife to make the soap. For soap you need it to be frozen or else the lye will burn the milk before it dissolves. The frozen milk isnt that great to drink because the texture is different when it thaws, but it does work fine for cooking. And it makes awesome scrambled eggs. I add diced tomatoes and serano peppers and onions with the goats milk and free range eggs to make awesome juevos mexicanos. The goats milk cubes in some vodka and dash of kahlua also make the best white russian ever!

(5,867 posts)I add a couple of teaspoons of uncooked cornmeal to each omelette. When done, I load it with taco fillings from the night before. My own little invention.
It's great for hangovers, btw

(1,773 posts)I usually prefer feta in my cheese omelet, but I can't see that working with a chili & cheese omelet. I'm guessing either a sharp cheddar or Monterrey jack, or perhaps a mixture of the two?
