What's for Dinner, Thurs., Jan. 6, 2022

White turkey chili using cannellinis and Monterey Jack cheese. I used ground turkey.

I cooked the cannellinis in the pressure cooker, the VitaVix. I didn't know what I was doing but as it turned out, I did them just exactly right. I tried to learn from the manual, but I didn't like the way it was written/organized.

The recipe asked for salt over the cannellinis while doing the pressure cooking. By putting salt on them, I was able to keep the skins on them. Sometimes when I cook them in the slow cooker, they lose the skins, but I've never tried the salt on them that way. This led to a significantly better chili than one where they fall apart.

Chopped salad to go with it. French dressing.

Dessert: small slice of pumpkin pie with whipped cream. Decaf.

Angus beef burgers with cheddar cheese on Kaiser rolls. Lettuce, tomato and onion. Pickles. Baked beans. Klondike bars.

Seems to be a good day for it!

Lean burger, sauteed with 1 diced onion, garlic, 1 lg green pepper & a chili seasoning packet, then added crushed & diced tomatoes& 2 cans each: mild chili beans, black beans, & dark red beans.

Yummy! Too tired to make corn bread, so I served with scoopable tortilla chips.

Just finished eating. Time for a nap. Lol

..then the pully or something broke 4 times on the snow bladed quad then the neighbors tried to plow with his pickup and ran off the driveway into the ditch then the snowblower broke. So.......boiling a big ol pot of beans was the only thing I could think of doing. Will have chili or just a bowl of beans topped with fried spuds and ketchup served with ghost pepper infused honey on cornbread.....
