Cheese-topped Baked Eggplant

The breaded eggplant slices are stuffed with a garlic and herb mixture, then covered with Gorgonzola and mozzarella.

Salad: red and gold cherry tomatoes, almond stuffed green olives, parsley, feta cheese cubes, green and red pepper, with pink salad dressing.

Topped with leftover beef tenderloin from last night's dinner, sauteed shiitake mushrooms, a bit of Boursin cheese tomatoes, red peppers, green olives and cucumbers and whatever other veggies are in the drawer with a champagne Dijon vinaigrette. Grilled garlic butter french bread.

Affogato and a shortbread cookie for dessert.

Who would have thought that a bunch of onions, ham and eggs could taste so good!

I use a spring form pan rather than a pie pan. Works just fine.

I was googling around for recipes and came across this exact one and now will save it since you're confirming it's a solid recipe.

I really like the idea of using a springform pan for it, as you did, as well. Much nicer and more appealing presentation for what is basically a quiche. An old roomie of mine used to make what she called a tomato onion pie, which was again a quiche, and while I liked it, I'm just not into cooked fresh tomatoes, such as a topping on pizza, so your recipe will suit me even better.

Homemade thick crust and tomato sauce. Fresh mozzarella and basil. Onions, anchovies and peppers on top.

No, it's not from leftover roast.

Al and I hit a gold mine last week in the form of a local food pantry. Thank goodness we did, considering the enormous veterinary bill we were hit with. (BTW, thank you all again for all of your help--we did get about half of what we needed.)

Anyway, we got a LOT of food, and not just pantry stuff. There was fresh produce as well as eggs, bread and some frozen meat.

I imagine this food pantry will be seeing us regularly until we manage to pay off that vet bill. We're lucky to have it.

Tonight's stroganoff is from a package of sirloin tips we got there (we'll actually cook the whole package tonight, use half of the package for our stroganoff and eat the rest w/ our breakfast tomorrow).

I also made a terrific salad using some greens we got at the food pantry, some broccoli we got there, grape tomatoes, celery, carrots, onions, and yellow bell pepper.

Dessert is leftover Dutch apple pie.

Ms K loves the stuff from Chinese takeout, pineapple chunks and ketchup notwithstanding. She's been juicing oranges all day, so how could I say no? I'll use good black vinegar and slip in some chili oil.
