What's for Dinner, Mon., April 22, 2024

Sesame Ginger Garlic Stir-Fried Vegetables. It has broccoli, onion, mushrooms, carrot, red bell pepper, and baby corn. Also garlic and ginger.

The stir fry garlic ginger sauce has soy, hoisin sauce, garlic, ginger, Shaoxing cooking wine.

I'm mixing in crispy fried tofu squares.

It's topped with white sesame seeds but I'm definitely adding my fave cashews, roasted chile lime.

Ginger kombucha.

Dessert: Green apple gummies. They are low sugar but high in fiber. My brother, who is diabetic, sent them to me. He has them as a regular treat.

I've already tasted one and they are delish.

1. Pasta Aglio e Olio with a few tweaks...

The tweaks include several items foraged this weekend.

My son came across several herds of free range morels on Sunday and I scooped up several bunches of late season ramps. We're meeting after work to trade our finds.

I plan on chopping both morels and ramps and sautéing in olive oil with red pepper flakes and eye-talian seasoning.

After I'm happy with their doneness, I'll add angel hair pasta before serving with cracked black pepper, Kosher salt, and freshly grated Romano cheese.

ETA - he's making morel pierogies this evening. I haven't asked his plans for the filling (assume it's morels/potatoes/cheese) but I'll add that later.

We also discussed morel raviolis but I think that'll wait until next weekend - assuming we still have some.

Each ingredient complemented the others - earthy/nuttiness of dry sauteed morels, punch of the ramps, saltiness from the cheese, and oomph of cracked pepper and red pepper.

I cooked the pasta and tossed it in the skillet with the sauteed goodies and let it crisp up just a bit.

Might be the dish of the year and it's only April.

Undecided here, but for fresh iced decaf daughter just brought so I could hand over matzohs to her! (maybe matzoh with butter.)

Large green salad with cherry tomatoes, raisins, chopped walnuts, feta and homemade ranch dressing

Lemon water
