"All the trimmings" are what make the dinner. The bird is just flavorless protein unless it's doctored up with pan gravy, cranberry sauce, and good sides.

However, it can be used as a substitution for things like veal and pork. It does so very successfully since it takes on the flavor of whatever it's in.

(20,277 posts)fresh local small farm turkey have a lot of flavor. I make a paste out of butter and fresh chopped herbs and rub it in underneath the skin.
Even if you have to buy a supermarket turkey, you can impart a lot of flavor by brining it.
