Pasta with some kinda' sauce the RG made. It has vegetables in it which are white and also what looks like carrots. I tasted it and it decided to put in some chicken sausages to make it a little heartier, and it's going to be quite delicious. The cut of pasta I'm using is rigatoni.
I also made up a big tossed salad with avocado and roasted cherry tomatoes. Cuke, scallion, etc.
We had an end-of-class party last night. We had pizza, and best of all, empanadas that my students brought!

Wait - what month is this again...?

(10,184 posts)along with the leftover pesto and onion pizza we made yesterday, but we didn't have any croutons so decided to fry up a stale tortilla cut into thin strips as a substitute. Then when I went to make the dressing I found we were out of eggs, so I ended up using some of the avocados the squirrels left me this year to whip up an avocado/basil dressing, since Caesar salads supposedly originated in Tijuana. Not what was planned, but it saved a trip to the store - and came out pretty good.
